BASIC BEAN COOKING INSTRUCTIONS:

Pick over beans & rinse thoroughly in cold water. Place cleaned beans in a bowl of fresh cold water, cover & soak for 3-8 hours or overnight at room temperature; drain & rinse well. OR (Quick Soak Method) - Place beans in saucepan with water & cover, bring to boil, remove from heat & soak 1-1/2 hours, drain & rinse well. To cook beans, measure triple the amount of water as beans, simmer until tender (see chart). Lentils, Split Peas & Black-Eyed Peas don’t need soaking but should be rinsed. SOAKED BEANS: COOKING TIME:
Pinto, Black, Small Red 30 - 35 mins.
Navy, Kidney (Red or White) 35 – 40 mins.
Great Northern 40 – 45 mins.
Lima 55 – 60 mins.
Chick Pea (Garbanzo) 1 hr. 20 mins.
UNSOAKED BEANS: COOKING TIME:
Black-Eyed Peas 30 mins.
Lentils & Split Peas 20 – 25 mins.
